Ingredients
- 2 tablespoons canola oil
- 2 teaspoons minced garlic
- 1 teaspoon crushed red pepper flakes
- 2 cups chicken broth
- 1 (10-ounce) box couscous
- Salt and freshly ground black pepper
Directions
Heat oil in a medium saucepan over medium-low heat. Saute garlic with red pepper flakes for 2 minutes being careful not to burn garlic. Add the chicken broth, turn up heat to medium-high and bring to a boil. Stir in couscous, cover and remove from the heat. Let stand 5 minutes. Season with salt and pepper and fluff with fork. Transfer to a serving bowl and serve.

I like how the basic recipe can be modified by adding spices such as cumin and paprika. Thanks

My husband is doing cancer treatments so we don't eat out for fear of the germs that could be at restaurants. The radiation on his face has also burned his throat so I had to back off on the heat. Instead I added a little cumin and smoky paprika along with the hot peppers to total the teaspoon of spice. My 10 year old couldn't get enough of the pita sandwiches with the meat, couscous, and cucumbers in them.
Don't pay any attention to that first review - I used her whole dinner plan and it was all good - the three of us have eaten 2 meals off of this and there's plenty for another meal. With the changes from one meal to another none of us are tired of it, either. No alcohol used in the meal at all!
