Forgot to review this from Thanksgiving but still haven't forgotten it. I love the crisp of the apples and the crunch of the walnuts. The dressing had an amazing tang to it but was still creamy, and nothing beats fresh spinach for a salad. This is a keeper in my book.

This salad is sooo easy to prepare and packed full of flavor. I made this for my husband and I for Thanksgiving to compliment the salmon dinner we had. It was so delicious. The apples give it a nice tang, the cider vinegar and digon mustard give it a nice kick, and the roasted walnuts and olive oil bring a perfect balance. This makes a great starter or light meal in itself!

I like to add honey to my dressing and it give more volume, and some red onion, or carrot strips, or radish. Sometimes all 3. A tasty sub for Granny Smith is Empire Apples from upstate NY--sweet and juicy.

I also agree, we need much less of Rachel, Sandra Lee who cooks up tablescapes which I adore, and the butter queens.

I , my husband, and my kids loved this salad. I added shredded cheddar, shredded swiss cheese and cranberries. Thanks for the quick, easy, and healthy salad. I love your show! I wish that you were on more often.

Although very healthy, I thought this was quite boring. I have another recipe that adds blue cheese or gorgonzola crumbles to it and the dressing has raw chopped shallots and honey in it. It's so much tastier! A little more fat from the blue cheese but you can use it sparingly.

I made this tonight with rave reviews. In fact, I made three of the recipes from this episode. All were great! For the salad, I did make one addition: a tiny bit of crumbled feta (because I had to use it up. Imagine, using a short cut (bag of spinach and a full meal in less than 30 minutes that really IS healthy, and not dripping with bacon fat and EVOO.
    .
So, WHY, WHY???? Can we put Ellie on every day please, and give Sandra Lee and Rachael Ray just one half hour per week? THANKS!

Preferred to not use all the apple and made a little extra dressing.
