This is a fabulous salad....all of Ellie's recipes are the best; however, I found that when I cut the recipe in half for my husband and me, the dressing was not enough. One tablespoon of EVOO just does not work for two salads.

I loved the salad however, the dressing was WAY to mustardy. I cut it with Splenda to take some of the bitterness from the mustard and my family loved it. Actually got my teenage daughter to eat apples with the walnuts. She NEVER will eat any fruit so I am thrilled. Thanks Lisa
