Spinach Salad with Hot Bacon Dressing

Ingredients

  • 5 slices lean bacon, chopped fine
  • 2 tablespoons minced shallot
  • 1/2 cup cider vinegar
  • 1/2 teaspoon sugar
  • 1 teaspoon Dijon mustard
  • 1 tablespoon olive oil
  • Salt and pepper
  • 1 pound fresh young spinach, coarse stems discarded and leaves washed well and spun dry

Directions

In a large skillet, cook bacon over moderate heat, turning it, until it is crisp, transfer it to paper towel lined plate to drain, and discard all but 2 tablespoons of the fat. In the remaining fat, cook the shallot for 1 minute. Add the vinegar, sugar, mustard, oil, and salt and pepper to taste. Bring to a boil, pour over spinach and toss. Serve sprinkled with the bacon.

    Way to much vinegar

    This recipe for the dressing has way to much cider vinegar. I would cut in half next time I try it.

    This dressing is fantastic. I've been using it on arugula and the tastes go really well together. I've tried it with a... shortcut- using precooked bacon pieces. It seems to work just as well as long as you add a bit more oil (because you won't get the benefit of the melted bacon fat) and add the bacon at the end just to warm it up. My fiance and I agree this is our new favorite dressing.Read more

    This is an excellent way to prepare spinach. It's fast, easy, and the results are delicious. I used pancetta instead of... bacon, as a special touch for the holidays. I also sliced the shallots instead of mincing them. This way the shallot rings stay intact, and look really pretty against the spinach leaves.Read more
