Ingredients
- 8 strips bacon (about 8 ounces), cut into 1/2-inch pieces 1 medium Vidalia onion, halved and thinly sliced 1 stick butter
- 2 cups water
- 2 pounds collards, rinsed and drained, stems removed, leaves cut into 1/2-inch strips Salt
- Hot sauce
Directions
Cook the bacon in a large saucepan over medium-high heat until crisp, about 5 minutes. Add the onion and butter and cook until the onion is tender, about 5 minutes more. Add the water and simmer for 10 minutes. Add the collards and cook until very soft, about 20 minutes. Season with salt and hot sauce, to taste. Transfer the greens to a serving bowl and serve.

Collards from farmers market in Forest Hills(young greenstasted very "southern" to me. Tasty,easy and would do again,I served with boiled potatoes. My blend was perfect,I did add garlic & red pepper

Never made collard greens--These were great! My husband and I layered brown rice, greens and black-eyed peas. I can't wait to make these again. Used fresh greens and cleaned them the way Paula told me to.

Delicious! This recipe was one of the best I have ever had. I substituted chicken stock for water and used applewood smoked bacon. At first I thought the butter might be unnecessary - but the smell of bacon/butter/and onion that filled my kitchen totally changed my mind.
