    Collards from farmers market in Forest Hills(young greenstasted very "southern" to me. Tasty,easy and would do again,I served with boiled potatoes. My blend was perfect,I did add garlic & red pepper

    Never made collard greens--These were great! My husband and I layered brown rice, greens and black-eyed peas. I can't wait to make these again. Used fresh greens and cleaned them the way Paula told me to.

    Delicious! This recipe was one of the best I have ever had. I substituted chicken stock for water and used applewood smoked bacon. At first I thought the butter might be unnecessary - but the smell of bacon/butter/and onion that filled my kitchen totally changed my mind.

    As a grown up Southern boy missing the great tastes and flavors from my yearly visits to my Grandmothers home, this recipe really hit the spot! Collard greens are really inexpensive and make a great tasty side dish any time of the year. As others have done, I have substituted chicken broth for the water and have added some garlic and red pepper flakes. I found the secret to the great taste is to let the collards braise in it's stew to almost evaporated. It gives the collards a very light smoky flavor. At other times, I don't braise the collards as much so that I have a mess of that "pan liquor" left over to dip my french bread in! Wow!

    Like many of the others, this was the first time I cooked collard greens. They came out fab-u-lish! I tweeked it a little to my own taste...less butter, chicken broth, and a pinch of red pepper flakes. That's the "art" of cooking....starting with a base, adding and subtracting, and making it your own. Thanks Paula (Bobby&Jamie too for a great base on which to build.

    This was my first experience with collards, both eating and making them. They were delicious, but I think next time I'll cut back a bit on the butter. I also drained off the bacon fat before adding the onions. Definitely will be making these again!

    I have been making collards for many years but saw this on Paula's show and decided to try it. I will never go back to my old recipe. This is by far the best way to cook collars. Thank you Paula!

    This dish was really good! I WOULD give it five stars, BUT I'm going to take away one of the stars because this veggie dish was made so unhealthy with that extra stick of butter and those eight (!!! strips of bacon.

    Otherwise, this dish was delicious. I used frozen collard greens instead of fresh ones. I bet this would have been even more tasty! But it was real quick and good with the frozen.

    Fabulous recipe!!! I added one chicken bouillon cube and used a combination of hot sauce as well as a small amount of cayenne. Best greens I ever ate!!
