We eat a lot of spinach and this was a great way to change it up... I will for sure make this again!

Was an interesting combo for sure. Since it was screaming oriental - I added some chopped water chestnuts for more crunch and diced pimientos for color. Everyone thought it was good.

I made the sugar snap peas to go with the pork tenderloin and they both totally rocked. My hubby is not that fond of spinach but gobbled it up anyway. Must be the garlic, ginger & scallion combo. Thanks Anne, you've got another winner here!

Wonderfully fresh with bright spring-like flavors...I would make this again as a side dish for other main courses. Nice and healthy and it's great to see an Asian inspired menu that doesn't include rice or noodles. I agree with the other reviewer (Dawn from OH that this dish is guest worthy.
