  • 3 cups chopped leftover chicken, rotisserie chicken or cooked chicken breast
  • 2 cups cooked rice
  • Sweet peppers, roasted or sauteed
  • Shredded cheese, for serving
  • Sour cream or Greek yogurt, for serving
  • Salsa, for serving
  • Cooked black beans, for serving
  • Cooked corn, for serving
Directions
  • Place the chicken, rice, peppers, cheese, sour cream, salsa, black beans and corn out on the table. Build bowls and enjoy!
