i had too much sauce for the amount of noodles. the flavor was good... i didn't put beets in since i had none but i don't think i missed out on anytihng without them.

I would experiment with this again..I would use half of the noodle package. Double up on the dresing. Maybe try adding a splash or so of soy sauce.....hmm..the dressing definitely needs tweeking.

I have to say I was expecting big flavor from this dish and it totally fell flat of that. There was not enough dressing at all to give it any sort of substantial flavor. I ended up making a double batch of it to try and give it more flavor. There may just be way too many noodles. I used a red pepper and sliced it thin in there instead of the beets. Not a beet person. All in all, very very sad that I didn't end up liking this dish at all and now I have a ton of leftovers I am going to have to give away.

Good recipe, I like the flavors. Next time I make this though I think i'll just crush/split the ginger and let it soak in the sauce. Then take it out before pouring over noodles.
