I don't usually shred my potatoes, I was putting everything into the blender which gives it more of a pancake texture. I followed Sunny's recipe and loved the savory flavors and the texture of the pancakes. We've made them a couple times now and each time my sweetie made sure we didn't have any leftovers! Yummmmmmmm....however, I also fry my potato pancakes in bacon fat, just as my Polish grandmother did, and I find this takes it over the top. This is not to take anything away from this great recipe, or the wonderful Ms. Anderson.

Try adding a little grated carrot or sweet potato for a bit of sweetness. It makes a big difference and is SO tasty.

This is by far my favorite potato pancake recipe. My whole family loves it and it is my standby now. I follow the exact directions with the exception of adding a bit more bacon.

Made these yesterday morning for a father's day brunch. they were a big hit. I used dried sage and used it sparingly because I wasn't sure how everyone would like the sage. My daughter said to put more in next time. Oh - I also used a bag of the "simply potatoes" and they worked just great. Will definitely make these again - probably with a roast pork recipe and serve with applesauce. thanks sunny for a great recipe.

I made this with "Kathy Baker's Beef Tender" and both were great! I used rosemary instead of sage since the grocery store had no sage that day. I am very picky with potatoes, and these were fabulous!

My daughter (17 wanted to make potato pancakes as a snack. This recipe caught my eye so she mixed them up. We didn't have bacon so they were vegetarian potatoes. With the fresh sage from the garden, garlic, and onion they were fabulous. Truly the best potato pancakes ever. We're keeping this one!! And it will get lots of use.
