Bacon, Onion and Cheese Stuffed Burger

Ingredients
  • 1 1/2 pounds ground beef
  • 1 clove garlic, minced
  • 1 teaspoon hot sauce (recommended: Frank's Red Hot)
  • Salt and freshly ground black pepper
  • 4 strips bacon, diced
  • 1/2 onion, chopped
  • 1 cup grated sharp Cheddar
  • 4 burger buns
  • Lettuce, tomato, pickles for garnish
Directions

Preheat grill to medium.

In a bowl combine beef, garlic, hot sauce, salt and pepper, to taste, being careful not to over mix. Warm a skillet over medium heat and fry bacon until crispy. Remove to a paper towel-lined plate to drain. Keep heat on skillet and fry a pinch of the beef in the bacon fat to test seasoning. Adjust seasoning, if needed, then form 8 even thin patties, about 1/2-inch thick and set aside. Saute onions in bacon fat in skillet until tender, 5 minutes. Place onions and bacon in a bowl with cheese. Form a spoonful of bacon-cheese mixture into a ball, then place in the center of 4 patties. Top each with another patty and seal the edges. Grill burgers over medium-high heat, flipping once until desired doneness is reached, approximately 4 minutes each side for medium. Serve in buns with garnishes. Alternative: In a medium skillet over medium-high heat, sear the burgers 4 minutes on each side.

I've tried this with cheddar, colby jack, pepper jack, swiss...all were DELISH!! I don't think I'll ever go back to the cheese being on top. I did borrow a suggestion from another chef the 2nd time making these and that is to brown them for 2 minutes on each side and them finish them off in the oven for 4 to 5 minutes at 400 degrees and I highly suggest getting your cheese fresh from the deli. item not reviewed by moderator and published

This is probably the singe best and easiest burger recipe I have ever made. So simple and crazy good. It allows you to tweak the meat to your desire. Personally I like to make a little extra of the onion/bacon mixture and work it through the meat as well. I add a little seasoning depending on my mood...ranch mix or spicy burger mix! Yummy! reviewer hmack0820 of Bridgeton got it right, this is great but adding sauteed mushrooms and feta cheese instead of cheddar cheese makes it rock. And to make it even better, ask your meat man to grind up some quality Beef Brisket for you instead of store quality non distinct ground beef and make your burgers with this. And I think a good tip for keeping your stuffed burgers intact is to make them up ahead of time and give them overnight in the frig to "seal up" ! I don't know why this works but it does! These were absolutely delicious. Sunny is one of my favorite chefs, we have a lot of the same likes/dislikes in food. These burgers were pretty huge but did cook down a little. As such, I didn't use a bun. My whole family agreed that none of them needed a bun either. I just put a little bbq suace on the top and ate some tomato on the side as my veggie. Absolutely delicious. We wanted to make cheeseburgers for my sons birthday but wanted something different. I figured dozens of five star ratings couldn't be wrong and oh, was I right! These were incredible. My guests loved them. I did add some extra hot sauce and would have added a little extra cheese next time. I LOVE this recipe and would def make again and again!!!! They were very JUICY even the next day. I used ground turkey and seasoned my meat with a little seasoned salt and black pepper. Did cheddar cheese and feta cheese(only because my boyfriend wanted feta cheese). I also added more bacon and sauteed some mushrroms and added it to the onion mix. I made this burger for our Labor Day cookout and everyone enjoyed it. They did not separate during cooking. For everyone having problems with the burgers separating or looking like 2 burgers stuck together try this. After stuffing and laying the second patty on top go around the edges with a fork, smashing down. Just like you would if making a ravioli. I made this recipe for the first time tonight and I was very happy with the end result. I substituted Worcestershire sauce for the hot sauce (I am not a big fan) and I added some Horseradish to the meat mixture, just for an additional kick. The burger was juicy and full of flavor - easily one of the best I have had! I did not have any trouble with the two patties seperating, but would highly recommend making CERTAIN the two patties are securely pinched together. Okay so these were absolutely delish, and I would have given them 5 stars, but my patties seperated on the grill!!?? I don't know if I did anything wrong, I sealed them completely but once they got on the grill the edges seperated and you could tell it was 2 patties with stuff in the middle. I made these burgers for the family on the 4th. My only change was to use worcestershire instead of hot sauce. I never would have thought to use ground chuck instead of round or sirloin, but the difference was amazing. The burgers were juicy and full of flavor! This is a keeper!
