Sunny isn't one of my favorite chefs to watch but this lady has some seriously good recipes! This is a bit time consuming just for breakfast but these taste great!

This was certainly very tasty and really did not add anything to the recipe. As long as it is tasty I really do not care how authentic it is. There all a lot of different versions to a recipe and this is a winner.

I will try this for family soon. I've seen several negative comments about the authenticity of this recipe. My family does not like corn tortillas except for my Steak Fajita Nachos, made with homemade chips. Regular Enchilada Sauce Made with Red Chiles I feel needs a little tomato to it, so I would probably mix one can with Salsa. Depending on time frame. I may use Hillshire Farms Fresh Mexican Chorizo. My oldest DD introduced me to Sazon a couple of years ago. We love it. Will make the kids "Sangria" with Cherry 7-Up.

    ok RAMPORT...
If you didn't like the dish, you could have simply said so. To sit there and say "have you gone to school" when you clearly have not was uncalled for! prepair should be spelled PREPARE btw! I am embarrassed for YOU! That being said, this recipe was very nice.

Found this recipe while searching for a "Healthy" Sunday Brunch. Very pleased with how it turned out. I did have to make a few alterations. Used dried sage and thyme in the turkey sausage since I didn't have fresh. The refried beans were also excellent, I added oregano, dash of paprika, a little squirt of tomato paste and a splash of vinegar since I did not have a packet of Sazon seasoning(will look for it next time. I'm usually not a tomato sauce maker but made this and was very pleased with the taste. This recipe is for sure a keeper! Thanks Sunny

A lot of Sunny's recipes sound fantastic, and I can't wait to try them. However, when I came across this recipe while searching for the Egg Cup recipe, I had to chime in. Raised by a Mexican from Mexico on traditional Mexican cuisine, with all due respect, this is not enchiladas rojos. This is tomato sauce. True red sauce is made with red chile and enchiladas are always, ALWAYS made with corn tortillas. Flour tortillas make burritos. A better name of the dish would be Baked Breakfast Burrito Casserole with Spicy Tomato Sauce.

    RAMPORT, EL PASO,
So I guess you are saying now that you're over the border that you make every single American dish exactly in the traditional manner. Well, congrats on your perfection.

This is a great dish. I don't eat beef or pork so was glad to see the recipe call for turkey. Most people know if they are unwilling to substitute turkey for pork or beef, so why beef about it. Just don't make it or make it with your pork.

I made this today. My husband and I loved this dish. Can't wait to make this when we have company over. The homemade turkey sausage, at first bite, has that touch of sweetness.....but then the "kick" of heat comes in.

I haven't made this yet...logged on to print the recipe so I could go to the store =P I've noticed that the bad reviews are usually when someone modifies/strays away from the actual recipe. Wish people could think a little more critically...maybe their bad experience was because they actually didn't follow the directions!
