    me and my boyfriend tried this recipe one morning for a late breakfast and we used beef chorizo and bacon istead (half and half. Although i must admit we used a can enchilada sauce still something just wasnt clicking for me. I think it was the eggs with the mexican theme that we just didnt like...probably wouldnt try that one again, but the concept was cool.

    HI SONNYfor the 10/15/09 response about observing men's taste & it being "turkey sausage"... it probably should've read "turkey filling" so she wasn't so confused. it did state in the recipe itself, turkey. if you see it in there & don't like it then why try it or make bad comments about someone else's taste. IT WAS DELICIOUS ANYWAY!! I COOKED IT TWICE. ONCE FOR THE FAMILY & THE OTHER TIME RECENTLY FOR MY BOYFRIEND. HE LOVED IT.

    Hi, Sunny!! My name is Kevin and I prepared these breakfast enchiladas for my wife on Saturday, October 17th (Sweetest Day. Coincedentally, this date is also our wedding anniversary. For those of you who might be shocked to read this, yes, I am the husband; yes, I do all of the cooking; and yes, my wife is VERY lucky to have me. Needless to say, these breakfast enchiladas and the refried beans were great!! The preparation itself took me some time but the meal was certainly worth the wait. This is a great recipe and I would definetely make it again.

    i think it would be good for you to really observe mens tastes. i tried your turkey sausage on my husband, he almost upchucked! he said this isnt sausage! i didnt tell him it was turkey. but i have to agree with him, turkey is a very poor substitute for the great taste of pork sausage. i guess i have to agree with my husband even though i dont want to!

    I had my family over for Sunday Brunch today. This recipe was great and i was a little afraid of what the sauce would taste like, i added more tomato paste for a thicker sauce and salt to taste and i was pleasantly surprise but, my family loved it and wondered where i got the recipe. The beans were absolutely wonderful, i will never be able to eat beans without Sazon, mmmmm! Thank You Sunny

    I ahve company for breakfast every Sunday and am always looking for something good. This casserole was a huge hit. The sauce makes it. I did substitute chorizo for the turkey and put one adobo chili in the sauce.

    I would skip the red sauce and substitute salsa. It is easier, cheaper and tastier. The sausage was good but overall the dish didn't wow me.
