I used this recipe on my Christmas 10 pound prime rib roast and everyone in the family said it was by far "the best dinner ever". Thank you,

This was our first rib roast--and OMG, is it EVER impressive! I concur with the other reviewers: it is REALLY easy. I don't know why I've waited so long to attempt it. We bought only two ribs (it came to about 4.75 lbs., but we didn't cut the brine or the rub ingredients. We brined it about 14 hours, and it is perfect. It was the perfect amount of salt, and the coffee and brown sugar add just the right amount of flavor without really being detectable. We also added some cumin and chili powder (about 1 1/2 tsp. each to the rub. Ours cooked to an internal temperature of 130° and rested 30 minutes before slicing. It was perfectly medium rare. This seems almost foolproof! Next time we have company for dinner that we need to impress, this will be the entree! Thanks, Sunny!

This was delicous, and yet SO easy! In my oven it took closer to 3 hours at 325, with a 6.22lb meat. The rub was so wonderful it was worth the wait, it was a complete hit for Christmas dinner. Thank you Sunny!

I'm preparing this as I type it. Didn't get a chance to brine it as long as your recipe but it's brining now -- will be putting it in the oven in about 2 hours. Can't wait to try it. Thanks Sunny!!! :o
