    Sunny, you are the BOMB!!! This receipe was sooooo good! I made this for our Christmas dinner this year and my husband (who is not normally a fan of cornish hens absolutely LOVED this receipe. I actually used the back bone that I cut out to butterfly and chicken stock to make my gravy. The meat was soooo moist and tender. Thank you again as this receipe will be a part of our lives for a long time to come!

    This was great! I am a college student who loves to cook! I watched your show and saw this amazing recipe. I waited until I went home for the holidays because my parents have all the cool ingredients, utensils and pans! I was so excited to cook this recipe for them and was a little nervous during preparation. This recipe is a little smokie. The family was a little nervous from the smoke at first but the final result of the dish got great reviews. I have never cooked with sage leaves but its my new fav base for butter now! The bacon topped it off! The hickory taste just seeped right into the skin! Great Great Great Recipe! It was quick and easy, minus butterflying the hens. I didn't buy them butterflied so I had to cut them myself but i got the hang of it after cutting the first one. Thanks so much! For all those searching for an amazingly flavorful recipe this is an amazing dish. But Turn on the kitchen fan first! Well worth it!

    I have made many Cornish Hens and this recipe is the BEST by far.
    It is so easy and has GREAT flavor and is so moist.
    This one is a keeper.

    First of all, I've never had the urge to write a review, as I have for this recipe.
    This was AMAZING! My husband and I are always looking to try new things! We had JUST bought 2 cornish hens to try, and ironically, Sunny was making this the next morning! We HAD to try it. It was actually pretty easy to do, especially after watching her make them the day prior. The sage butter, was delicious. The smells in my kitchen.....omg. And then. To try this. O M G ! My husband and I were in hen heaven! I can't ever remember eating something sooooooooo succulent! You have to give this recipe a shot. We're making it again for our Christmas dinner. Simply, amazing. Thanks Sunny.

    I had to laugh at a previous post about the 'apartment nearly burning down'... this recipe does smoke, but turn on the vent b/c it's worth it! I couldn't bring myself to use *that* much butter (used 2 T and I substituted garlic and rosemary for the sage (eyeball it as Rachel Ray says. I used a fairly large stainless steel pan and I could still only get one bird to fit comfortably - was worried cooking method (namely crisp skin would be sacrified if I overcrowded the pan. Had I realized this earlier, I wouldn't have dirtied my stone for garlic roasted potatoes and onions that I could simultaneously and just surrounded the bird instead. What a perfect dish to do in about an hour on a weekenight! This is such an impressive dinner that I cannot wait to make it for others.

    Before trying this recipe the only butterfly I knew how to do was the dance..and I could really get down. Now I can butterfly a cornish hen to perfection and the sage butter OMG!! GIrl you are amazing!! Your dishes are gonna get me a new husband! I am a widow now and never thought about cooking ever again, but from watching you, I am cooking again and your recipe made me want to get in my kitchen and throw down!! Got my pots sangin' a new tune now.

    So finding fresh hens was a bit of a challenge in my neck of the woods, I was unable to find sum so i had to settle for frozen ones. After i finally got them thawed out and prepped they where awesome! My wife doesn't care for sage so i substituted with garlic, dill, and a touch of old bay. In the end my wife and i loved them and i intend to make them for Christmas eve. THANKS AWSOME RECIPE!!!

    So here's a little story about my experience using this recipe. My boyfriend bought 2 beautiful hens that were in our freezer forever. I decided it was time to make them so I searched for a recipe- this one looked perfect. I bought the ingredients, did all the prep work, and then it came time to sear the hens. I have never done this and was very confused as to when the hens were seared enough. The recipe was very vague... then I continued, and prepared to put them in the oven. Because no pan was recommended in the recipe, I put them on a baking sheet and almost burned down my apartment. Then I checked to see if they were ready, and they weren't so I put them in for an extra 10 minutes and served them to my boyfriend who is now feeling ill from possible salmonella poisoning. Maybe I suck at cooking or maybe this recipe is way too vague and should not be listed as "easy." I am quite disappointed.

    I was very concerned about putting bacon on poultry and was so tempted to leave it out. I'm very glad that I stuck to the recipe though! The occasional smoky/bacon bites were incredible. Traditionally my family is not so keen on Game Hens but this recipe is a keeper! Easy and delicious.

    I am what's called a moron in the kitchen, but thanks to Sunny I was able to produce something that was not only pleasant on the palate, but from my husband's point of view, delicious!
