watched sunny make this yesterday and i had to make it that night, so easy, so elegant. am going to make it for christmas eve. i did change a few things, since we are not huge sage lovers i substiuted basil and omitted the bacon. i also added 1/2c. of white wine to each pan when i put them in the oven. to make handling easier i also recommend that after you butterfly the hens you also quarter them. this is one definitly worth trying
