    This is pretty easy to make and it is amazing! What's not to love...cheese, mushrooms and broccoli?! Highly recommended!

    Everyone loved this side dish for Christmas. I omitted the mushrooms some family not big fans and I used light cream instead of heavy cream. Was a hit, and it got all of the kids to eat broccoli.

    Excellent. Lots of flavor. I used brown rice and substitued Velveeta for half of the cheddar and Pepper Jack for the other half. Also added some bread crumbs to the top. It's a really nice-looking dish. I might use Arborio rice next time if I can get the water level adjusted.

    This recipe is a winner! I've made it several times for holiday parties and potlucks, and people scrape the bottom of the dish for the last bits & pieces. Even my daughter, who never eats mushrooms, likes it!

    I was really pleased with this recipe and the response I received from family & friends when I served at Thanksgiving. A crowd pleaser & makes plenty for large parties.
    The ONLY change I made was the amount of cheese I used; I added more after watching the video clip. The cayenne did NOT make this dish too spicy!
    I started out by preparing Mahatma rice but it looked to sticky/clumpy so I switched to Uncle Ben's. I used frozen florets chopped up pretty fine after they thawed. I used fresh, organic shitake mushrooms & removed the stems as Sunny suggests in the video clip. The shittakes really added a gourmet flare to this otherwise basic-but-yummy recipe.
    I prepared & baked the night before & allowed to set-up in the refrigerator overnight. I brought to room temperature before reheating.
    I have added this to my favorite recipe file & will definitely make again!

    Delicious! I made this for dinner last night & everyone loved it. My husband took the leftovers in his lunch & my kids ate the rest today, it was a hit. I baked three seasoned chicken breasts on top so it would be a complete meal. Thank you, thank you for the great recipe. :

    OMG this was awesome! I added some cubed chicken and had it for lunch for a WEEK! You'd think I would be tired of it but no. Now just to warn some of you. When I took it out of the oven I gave it a taste and started to freak out because it seemed a little bland. But, give it a day and the flavors will marry and the taste is great! I used brown rice and half and half though. Just a tip for my spicy food lovers give pepper jack cheese a try! Go Sunny! Go Sunny!

    This dish was awesome!! Easy and fast --you can't beat it!
    It can be served with a main course, or it is enough just served alone. The cayenne pepper added a little to much heat for my family, so next time I will probably not use as much. It does make a lot, I took some leftovers to my friends at work and they raved!

    i'm sixteen years old and made this recipe when i was 15! last year for thanksgiving and it came out VERY well. super tasty. i love the creaminess and the garlic flavor in every bite. the cayenne peper add a good kick but wasn't too over powering because even my three years old sister could eat it. i used fresh steamed broccoli because i prefer fresh vegies, it would have a firmer texture than the frozen boxed one that the recipe required. i also used baby bella mushroom and it still worked great! i'm looking forward to making this recipe again for this year's thanksgivin. i totally recommend this recipe to anyone who's looking to impress your dinner eaters on any regular day or on thanksgivin!
