Slammin, Sunny, Slammin! The best Chops I ever prepared. The flavor was just right and the Chops were crunchy and tender all at the same time. My wife took a look at them when they came out of the skillet and said, " Ummmmmm, they shooooooo look good." However, it didn't take eight (8 minutes per side for me at that high of a temperature--perhaps because my Chops were a bit thinner than yours. Gonna do my Chicken with this recipe next!

This was very easy to make and it turned out to be an exciting fall offering. It will definitely be added to my regular rotation.

Being a southern girl from Virgina, I have been frying pork chops all my life. I have never had one so light and crispy, excellent trick with the corn starch. Sonny this was excellent, and I am a hard cook to impress.

The only good thing that I can say about the breading is that it did not fall off the chop when frying. Otherwise, the end result was a gummy chop with no flavor. The appearance also was not appealing as it really didn't brown but turned out a rather grey color. Perhaps some paprika or more cayenne in the breading would help. I did not make the pear chutney with the chops so in all fairness that may help the dish. I will not make these again.

I have been trying for about 2 years now to make something fried with a nice crispy skin that does't fall off, or is way to thin. I've tried at least 20 different things, but nothing worked as well as 1 part corn starch, 2 parts flour. It worked magnificently. A great depth of crunch, and mmmmmmm.... I honestly used it on chicken with some different seasonings.
Sunny thank you so much. Finally I can fry things and not be ashamed.
