You can create up to five timers

Directions

Mash 6 hard-boiled egg yolks, 1/4 cup mayonnaise, 1 teaspoon dijon mustard, the zest of 1 lemon and 2 teaspoons chopped pickled jalapenos. Season with salt and pepper. Spoon into the egg whites; top with canned fried onions and smoked paprika.

    These were spectacular! I forgot to add the lemon zest but turned out wonderful none the less! Next time I am going to add the lemon zest to just to see how it all comes together

    I was unsure about the fried onions on top, but everyone loved them. Loved. Some used regular paprika but I thought the smoked version was perfect with the jalapenos, which weren't at all overpowering. We ran through these like we'd never seen eggs before.

    Personally, I'd add a touch of vinegar or caper juice; maybe the picked jalapeno juice. crumbled bacon would also be interesting. It's just a matter of taste.

    I made this while on vacation on Maui and instead of the canned onion, I topped with onion macadamia nuts. It was amazing. Be careful as some of the flavored mac nuts contain msg.
