The chicken was good. Considering there was seasoning in every step, I was really surprised that it didn't have more flavor. As always, I followed the recipe exactly. I will definitely try this again, because the crunchy texture was absolutely to-die-for!! I loved it! I just need to tweak the seasoning to make it a little less bland. It still gets five stars though. I can't wait to try it again!

    UPDATE:
I made this again with the seasoning changes. Instead of just sprinkling a pinch of curry, I generously shook it from the bottle onto the chicken - same with the salt and pepper (not too much salt. I did spice measurements for the dredges as directed. The flavor was much better this time. I also made a dipping sauce for it. The sauce is a recipe for the sauce that a certain national restaurant serves. It was the PERFECT complement to this dish (RL pina colada sauce from cdk. I served it with Sunny's "Stormy Rice" this time, as I did not like the original rice in the episode.

Delicious, quick and easy. I always struggle with trying to come up with different ways to prepare chicken. My mom was coming in from out of the country and I wanted to welcome her with a meal that say welcome home to the United States of America where we have the best foods and ingredients available to make savory meals. She loved it as so did my husband and I.

I have been craving coconut shrimp but my husband is allergic, soo sad! I found this recipe and decided to try it out and see it it could conquer my craving! It was sooooo delicious! My husband took one bite and told me he wanted me to be a stay at home wife. Haha! The chicken was moist and the crust was delicious!!!! Five stars and two thumbs up!

I used a little more curry and cayenne then directed and it came out delicious! I made it with white rice and topped it with a mango salsa. I used the salsa from the Boneless Breast of Chicken with Mango Salsa-i just used one spoonful of sugar

It looked beautiful! We took pictures

I reeeeeally wanted to like this recipe, however unfortunately, it was not particularly special. The flavor was lacking depth. It's not bad, just not great.....BUT, I did a last minute twist that changed everything. I used sweet & sour sauce to serve and was able to recommend this recipe based on serving with sauce. This made the chicken delicious. So, I will make again, but I will use chicken tenders and sweet & sour sauce. I will also try garam masala curry as it goes better with coconut. Thanks Sunny!

Wonderful! I made it gluten free with Jules flour and Gillian's Foods wheat free, gluten free, dairy free bread crumbs. My 18y/o son who is not gluten free took one bite and said "yum"!

We loved this recipe. Even our children loved it. I was a little worried about the curry powder but it ended up being a mild but tasty addition to the chicken. The texture of the panko and coconut was very good and the salsa was just what the chicken needed to make it great.

I made this chicken the other night for dinner and everyone loved it! It was flavorful, the chicken was moist, and the coating gave a nice crunch factor! It reminded me of coconut shrimp, but for a large family the chicken was great for the budget! I will definitely keep this recipe! Thanks Sunny!
