Sunny, you rarely disappoint, and this one you absolutely knocked out of the park. Oysters went on sale after Thanksgiving, so it was a perfect chance to try this out. Wonderful breading and the remoulade is delightful. We made sandwiches, but also at just as many simply dipped in the remoulade. Thanks.

I don't eat bread, so I just made the fried oysters and the sauce, and it tasted great. Good batter - I like the idea of cornmeal. I didn't have all the ingredients, so I left out the pickle juice, capers, and just used normal paprika, and was lazy and just whisked it together instead of using a food processor, and it turned out fine. The wife and I had fun shaking the oysters in the brown bag.

Used this recipe with shrimp also the sandwiches were awesome. I varied it a liitle by shredding cabbage and using the roumalade as a dressing instead of a spread. Then placed the cabbage in the sandwich with the shrimp.

We got sick of eating leftover holiday food so we found this recipe. Went to 4 stores and only found 1 jar of oysters. Then we decided to get 3 pounds of shrimp and two pounds of Catfish. Tripled the recipe ingredients to feed 12 people, then we fried the oysters, shrimp & Catfish. Made the Spicy Remoulade Sauce and also made Aaron McCargo Jr.'s Jalapeno Relish. Used both on the sandwich and the sandwiches were amazing!!!

To the poster who asked:
"Why do people post a recipe that calls for pickle juice, yet don't tell you whether that would be sweet pickle juice or dill?"
Well, for one, it's such a small amount, you're never going to tell the difference. Especially with the other ingredients that will overwhelm it. Two, some people like dill pickles on an oyster po boy, so go with the flow. But po boys come in infinite variations. There's no "fast and hard" rule, except maybe for some purists.

I thought this was very good. I'd ignore the commentors who complain that its not "traditional" or a waste of some ingredient. The episode wasn't on how to stretch your food dollar. Relax and enjoy it!

My mom made this tonight and it was super good. We used shrimp instead of oysters and my brother and I loved it. We can't wait to try it with the oysters and we are only 12 and 10.
