    I love this recipe.My kids don't like a lot of spice so it is perfect .Also if you use 90% or higher you don't need to drain the meat (not a lot of fat.

    Overall this recipe was really good...however I had to keep scooping out the grease from the pan...thank goodness I did this before adding the seasoning and broth. I was expecting some heat in this recipe coming from Sunny. I had to add some Franks red hot, chili powder and siracha to the meat mixture to get it to where I am used to for enchiladas. I'm part mexican and whenever my mom or I have made enchiladas we bring the heat...but I am sorry this is why I am giving this recipe a 4 instead of a 5....simply because it lacked heat.

    Next time I think I am going to add a few cans of green chiles and a few chopped habenero peppers or a jalapeno or two. I used 3 lbs of meat and it worked out perfect-better than 1.5 lbs.

    My boyfriend was drooling and had like 3 servings in one night. My mom said she had a party going on in her mouth!

    This was so good!! One problem I had was after adding the broth, sazon and spices to the raw ground beef, I had to drain it. I felt like a lot of the flavor went out with the grease.
    I added more sazon and beef broth.
    The recipe did not mention draining the fat off the ground beef, but I could not imagine leaving it in.
    My family LOVED it!!!, We added lettuce, tomato, avocado, sour cream when finished.
    I also did half with imitation crab meat, and that was the first to go.

    This casserole is excellent and flavorful. For a 13x9 pan, I only used a total of 8 tortillas, and used flour instead of corn. I also added chipotle peppers to the sauce, and layered in some jalapenos. In addition, I used about twice the amount of cheese. Definitely a keeper.

    I prepared this recipe and it is wonderful. I love being able to prepare homemade sauce. I will not prepare a recipe that calls for me to open a can of sauce. Sunny's sauces are excellent. I did not have sazon so I used the ingredients found in sazon. This the only enchilada casserole I will prepare. I did find the food to be spicey. I added two chopped serrano peppers to the beef. I did not have a problem slicing the casserole because I allowed the food to set before serving. Sunny's recipes are excellent. Does she have a cookbook?

    I loved this dish. Before making it, I read the reviews and took some of the advice from others and spiced it up a little bit more. The prep took a little while, but it wasn't bad, easy to make and it turned out delicious. I really think this dish and the spices are up to whoever is making it. If you don't like that much spice you can easily add less, and if you like more you can taste and add more. I added two packets of sazon instead of one and also added a little bit more garlic and added some chili powder instead of onion powder because I was out. Instead of using corn tortillas I used flour tortillas because I already had leftovers of those. When taking the beef out to put into the casserole dish, I used a slotted spoon and that seemed to really help cut back on the sogginess so many complained of. The baked cheese on top is awesome with the rest of the dish. I will definitely be making again. So yummy!

    I think the enchiladas were delicious. It was very simple to make. It did require some time to prepare and cook but it was worth it for my family. Also the Sazon can be a little difficult to find at chain stores like Walmart but I was able to find it at a local Hispanic store in my area.

    This took a little longer than usual but it WAS worth it! It was as beautiful as it looked on the show and it was delicious. My 13 year old son has requested it for breakfast.

    Instead of beef I used turkey. And since I couldn't find at a Deli Sazon, I improvised. My kids thought it was the best Cheesy Turkey Enchilada I have ever made. The only complaint my kids had: There wasn't enough of the enchiladas.
    On the other note, where can I purchase Sazon?
