It was pretty good...but seemed to be missing something. It was great to experiment with all those different flavors, especially the sazon. I made it a second time tonight, and went more on the cheap and easy side. Poured a can of tomatoes in a bowl, added onion powder, cumin, thyme, and salt. Then, added some chunky salsa...just eyeballing amount to make it about the same liquid amount as the first time. I didn't even heat it up..no peppers or onions...salsa is full of them.
Browned ground beef/drained, added cumin, onion powder, thyme, and salt. No Sazon b/c I forgot it...but didn't miss it at all. No onions or peppers, or even garlic in the beef either (not crazy about garlic. Then I layered it with the cheese and tortillas. It was lots better this time! I gotta hand it to Sunni for coming up with the recipe...I just wanted to make it easier, faster, and more flavorful...we definitely liked it better the 2nd time around!

I LOOOOVE that this recipe is gluten-free!! Or, at least, I can easily make sure it's g-f. :- I can't wait to cook it, my g-f daughter will be thrilled!

I think this is one of the BEST dishes I've ever tried!! My entire Family loved it! It is a time-consuming dish, but well worth it!! I deffinately want it again!! Thanks Sunny for an excellent treat!

I liked this casserole. As most said, I added extra spice since we like our food really spicy. I also, didn't make the salsa like she did, I just bought a can of EL PATO sauce for enchiladas. And I diced some onion as well. overall, it was an amazing simple dish :

We had this for dinner last night. After reading some of the reviews, I knew I would need to spice it up for us. Instead of making the sauce, I used 1 can hot and 1 can medium enchilada sauce. I couldn't find the sazon seasoning, so I used a packet of taco mix. I also sprinkled in some red pepper flakes and chuncky salsa. Served it with sour cream. YUMMY, I will make this again

Wish I would have read the reviews after watching the show...should change the name to "Not So Easy, Cheezy American Hamburger Casserole". Way too bland, even with some added spice and spent two hours in the kitchen for a mediocre, "Hamburger Helper" type dish. If a friend served this dish, I would tell her it was good--but I would not ask for the recipe. I love Food Network, but won't make this one again.

I took this to a group meeting as the main course. Several people asked me for the recipe. : Very tasty! Of course, I did put some hot sauce on my piece, but the dish is mild enough to serve a group of people.
A few caveats: I doubled the Sazon in the recipe and added a pinch more onion powder, salt, and cumin. But, maybe my beef was particularly bland. Also, my tortillas fell apart when I dipped them in the sauce, so instead I spread a light layer of sauce on the cheese. Then, I placed each tortilla on the casserole and covered each with sauce. That way, each tortilla was completely coated, but they couldn't fall apart.
This dish is my best casserole yet. :
