    I actually changed this a bit, (which took a bit longer, but worth it To the sauce I added chili powder and red pepper flakes because we like a little heat. For the filling, instead of beef I baked a whole chicken and then shredded it and put it in the pan with the same veggies and same ingredients although I added about a half packet of Lawry's enchilada seasoning, red pepper flakes, and chili powder, and a touch of garlic salt to the chicken when it was in the pan. Everything else was the same, and it turned out so yummy! And honestly, was so easy to make because half the time I was able to do work while it was in the oven. (most of the work is chopping I will definitely make again.

    I followed the recipe except,I subsituted a couple of things. First in the sauce I used 14.5 oz can of petite tomatoes and I also used flour tortillas shells instead of corn shells. And it turned out great. My family loved it. And it was easy to make. I would make this again.

    I made it a little more simpler with canned enchilada sauce for the shells and thick and chunky salsa and taco seasoning mix in the hamburger. It tasted incredible! Glad to have seen the show in order to come up with this version.

    I think, if I make it again, I will add some of my own touches...I was very dissapponted in the tomato taste, I thought it was bland..I did like the cheese factor but think i should have used chipolte sauce in the meat or something else for that extra kick..I spent extra money making this recipe and I still cant believe I didnt think ahead of the recipe....If you do make this recipe, please spice up your meat or you will be trashing a whole casserole

    This wasn't an enchilada recipe...it was okay but it doesn't deserve to be called "Enchilada" - what happened to the chile to give it that authentic mexican flavor? Ths red sauce tasted more like it should've been poured over pasta topped with cheese. I won't be making this recipe again.

    She should call this "Easy Beefy Cheesy Sloppy Casserole" This looks disgusting. It takes half the time and much fewer ingrediets to make awesome authentic enchiladas. I can't believe she can honestly say this taste great after she lived here in San Antonio, TX.

    Where is the chile? Good for maybe a Southwestern cheesy beef tomato casserole. This does not have any authentic red chile sauce and shouldnt be called enchiladas.

    Hello from Killington VT - I will definitely make this at my next Pot Luck Friday night parties, that we have here at our Inn. It looks so easy and the recipe seems easy to follow. Thank you Sunny for sharing this recipe!!!!
