    Great recipe. Roasted the red pepper myself instead of using pimentos in a jar. I've had a million versions of pimento cheese in my life, and this is the best.

    Yummy! I didnt have garlic of all things, so i substituted garlic powder, and I used celery salt I had and omitted adding extra salt. Best pimento cheese ever, im not usually a fan of it but very good. Store bought is gross! I made baked potatoes and stuffed it with this topped off with fresh scallions, also used as dip for potato chips

    I really love this recipe...the smoky paprika gave it a great touch, I will love this for sure on some good bread, a pickle and a COLD beer!!!!awesome taste.... NEVER will I buy a store brand pimento cheese again!!!

    Made this over the weekend and it was sooo good! Everyone was asking me if I really made it! I never heard about pimento cheese before but southerners definitely know how to make a good spread!!

    Should be called addictive pimento cheese. YUMMY! We just used regular paprika because we already had it. I'll have onion breath forever but it was worth it.

    Sunny, I was disappointed in this recipe. It looked interesting on your show but it's so far removed from traditional pimento cheese. There was not enough of the pimento flavor. Even after I added another jar and more pimento juice. The paprika and onions were overpowering. To each, his own, I guess!

    I made this yesterday for lunch and it was very good. And even better today! The only things I did differently were I didn't have any pepper Jack so I used regular Jack with Colby. And I used smoked paprika and regular paprika mixed half and half. That gave it a much milder, but important smoke flavor. For me, using only smoked paprika would have been too smokey. I do like pepper Jack and I think it would be better with it. I also added a tsp of cayenne for an extra kick. I think maybe a little sweet pickle relish might be good as well. Later, when make a sandwich I'll add a little bit and see. I'll be making this baby again! Thanks Sunny! You're the greatest of aaaall times!
