I made this yesterday for lunch and it was very good. And even better today! The only things I did differently were I didn't have any pepper Jack so I used regular Jack with Colby. And I used smoked paprika and regular paprika mixed half and half. That gave it a much milder, but important smoke flavor. For me, using only smoked paprika would have been too smokey. I do like pepper Jack and I think it would be better with it. I also added a tsp of cayenne for an extra kick. I think maybe a little sweet pickle relish might be good as well. Later, when make a sandwich I'll add a little bit and see. I'll be making this baby again! Thanks Sunny! You're the greatest of aaaall times!

This recipe is fabulous. Every southern woman needs a pimento cheese recipe, and I've found mine. Like some others, I also cut the onion in half and put in a little less celery seed than is called for. I serve this with crackers as an appetizer when we're having a barbeque.

i absolutely love this recipe! instead of red onion, i use green and instead of pepper jack cheese, i use a taco blend. it is absolutely delicious! i made this for mother's day and my family is still raving about it!

I have been looking for a good recipe for years. My mom has just an OK recipe. This one has so much more flavor and a little bite with the pepper jack cheese. My wife who has always dislike pimento cheese loves this recipe. I do not like onions so I omitted them and this pimento cheese is perfect.

I left out the garlic and celery seed. Also good with a little worchestershire sauce, about 1 tablespoon. I used a mini loaf of pumpernickle bread to make appetizers for Easter. Very good.

Just delicious-- on tortilla chips too. I cut the red onion in 1/2 (1/4th total because it was very strong.

Prior to trying this recipe I had never tasted pimento cheese. My entire family raved about the flavor. It's become a favorite special snack. We enjoy it on crackers and on celery. I think the smoked paprika is the secret ingredient that makes it so tasty.

This tastes so good! I was skeptical cause it was not something that I've ver eaten before. But, my husband and elderly parents agree it's a winner....with the red onion!
