    I've made this twice in the past week! I use enough olive oil to coat the pot; added just 3 slices of thick-cut bacon, two boneless chicken breasts (cut into chunks, smoked sausage, onion, red bell peppers, garlic, Italian seasoning, pinto beans, and rice. I used chicken broth instead of stock. I also added crushed red pepper to give it a little kick.

    I did not add salt as the ingredients I used made the dish salty enough for my taste. I am making another pot as I type this time with Brussels sprouts and Cannelloni beans, but no rice. This dish is simple and delicious any way you slice it. 10/10!

    Best chili/soup I ever made! Made a few ingredient changes to suit my taste-buds: red pepper vs. green, 4 c chicken + 2 c beef stock, 16-bean mix vs. cannelini, rice added only when we eat the soup. Don't like mushy rice if it sits in the broth. Was a HIT feeding the masses at my son's high school band home show event and emptied the crock pot at work! Will make again this weekend ...

    This was delicious! The only thing I changed, as others did, was great northern beans. The kids loved it, hubby and I loved it - - even mother-in-law loved it! Definitely a keeper.

    This is soooo good! I'm not a beans and rice kind of girl so not familiar with making anything like this but made it when my son came to visit since he is a big fan of this kind of food. I will make this again ... followed the recipe exactly! Very flavorful and filling!

    OMG!!! This was absolutely delicious. I also substituted and put Great Northern Beans into the recipe. It was a good pot of soul food! And, I halfed the recipe because it is just my husband and I. Otherwise it makes a huge pot.
