This recipe was incredibly delicious and what a contrast of flavors! Although the prep was a little labor intensive (really not bad, it was worth every bit of effort. The recipe was easy to follow. I used leftover chicken from another roasted chicken recipe I found on here, and everything meshed so well! As someone else said in another review, who knew Italian and Mexican flavors could go so well together?! The tomatillo sauce really sets it off. I will have to try another of the reviewer's ideas by using oven-ready lasagna noodles next time to see how that works out. I would recommend this dish to anyone and everyone. Definitely worth it! YUM!

I LOVE this recipe. The tomatillo salsa is perfect to top it off. I decided to exchange the manicotti for lasagna noodles to make it even easier. Just layer all of the ingredients instead of stuffing the shells. Same taste, and less prep work!! It could also just be baked with another shape pasta mixed in - macaroni, ziti, farfale, etc....Mmmmmm maybe I will try that tonight!

Great idea. These were amazing made them once and kids are bugging me to make them again. The pesto at the end was the perfect topper.

Best thing I have ever tasted. My husband is usually really picky with dinner. But him and my 3 children were so happy and they even fought to eat it for breakfast the next day! I added some cumin but it was wonderful!!! Thank you Sunny!!!!

Really great recipe. Also used 2% milk and still had a yummy thick sauce. Added cilantro, green onions, lime juice & cumin to salsa. A can of drained fire roasted tomatoes is better than fresh and also added cumin, smoked paprika and ground chipotle to chicken mixture.

Great Recipe! I made it twice this week already. I prefer about 3/4 of the onion in the stuffing for the manicotti but even with the whole onion it is still awesome.
