I made these for a girls' night and saved enough to accompany a small Thanksgiving dinner the next night. They went over really well in both places. I made the recipe as it was, but I was a little surprised that there wasn't any pumpkin pie spice in it. I may try that tweak next time.

It is a fairly quick & easy recipe but definately needs tweaking. Needs to be sweeter and I'd recommend some spice- cinnamon or pumkin pie spice.

I really liked the idea. The flavor was not pumpkin pie enough for me. So I took out and added a few things. I took out the corn syrup and replaced it with mapel syrup. I only added a half a tea spoon of vanilla extract and, added two tea spoons of pumpkin pie spice and a half of tea spoon of cinnamon. I made two baches of filling for 24 minnie pies. I like thick pie. I really liked the idea for this we are making it apart of our holiday meal! Thank you!

When I saw Sunny make these on her show, I couldn't wait to try the task, myself! :-

I did not have mini muffin trays, so I used my regular sized ones - without a problem. The end result was just a mini pie that was not as thick in appearance.

I had to bake the crusts for about 10 minutes longer than suggested, but it could be because I used margarine (I think?! in place of the butter - I forget! :- I eliminated the tablespoon of sugar in the corn syrup, but be forewarned that they were not really sweet in the end. I thought the corn syup would have been sweet enough.. wrong! :-

Those who tried it, enjoyed these very much - so I would make them again, for sure.

Thank you for such an innovative recipe, that makes an adorable presentation, too! A good "100 calorie" snack, perhaps? :-

As soon as I saw these on tv, I had to make them. They came out just as delicious as I had hoped and were a big hit with my friends, but it was a real challenge to get them out of the mini muffin tins. I used non-stick spray on my non-stick pan and loosened the mini pies with a knife, but the filling still stuck and in 2 cases the pie fell apart. I've heard good things about the spray that includes flour; I'll try that next time. I will definitely make these again.
