I am watching this episode as we speak, I wrote down what sunny did.
Sear and cook the proscuitto wrapped beet tenderloin/filet pieces in butter and extra virgin olive oil - equal parts - about 1-2 Tbsp. each. Looked like the heat was med. high. There were only 2 ingredients in the proscuitto wrapped filet mignon. After removing the meat from the pan when it has finished cooking, use the drippings to make a pan sauce as follows: add 3 Tbsp. finely chopped shallot, saute briefly to release flavor and soften a bit, about 2 minutes. Add about 1/2 cup chicken stock, stir. Let it cook for a few mintutes to reduce, and to deglaze the pan (loosen the browned bits from cooking the beef and proscuitto. Then, add a lump, (she didn't say how much, but it looked like a healthy 2 Tbls. of stone ground mustard. Stir to completely incorporate. Then, turn down the heat and add 1/4 cup heavy cream and stir constantly, till sauce is creamy, about one minute. Add a tsp. chopped fresh parsley at the last second before removing from the pan, to pour over meat or serve on the side.

I thought this orzo was very clean and fresh- it had a very nice taste. The lemon gave a very nice hint of flavor. I added a little more red onion, lemon and garlic for a bit more flavor. The cheese tied it all together! Very good!

i couldnt find it .i found the orzo one and the desert one but not the steak one that was on this show
