Vegan anyone? Crispy, chewy perfection!! I have made these twice now in three days.

Both times I exchanged chopped dried cherries, shredded coconut, walnuts and dates. The first time they were coming out of the oven as people were arriving for a party the majority of the cookies were eaten as appetizers and then the rest were finished off for desert, there was only 6 of us.

The second time I made them vegan style. I exchanged the butter with half olive oil, half vegetable oil. I had two small Fuji apples that I made applesauce out of using orangejuice as added liquid, so I exchanged the egg with the applesauce. Again the night ended with nothing leftover and this time there was 9 of us total including 2 children.

You couldn't tell the difference between the two batches. That really surprised me but I felt very proud to be able to bake something truly outstanding for my vegan family members. Thanks Sunny for allowing me to shed some of my fear of cooking for vegans.

Nice and crispy on the outside and chewy in the middle. Excellent flavor and the baking time is right on point. Keeper recipe. Thanks Sunny Anderson.

Best cookies I have ever made....to keep them super moist, I substituted the 1/2 cup walnuts for 1/2 cup shredded coconut. I may never make another kind of cookie!

These cookies are the bomb dot com! The only thing I changed was using cashews instead of the other nuts. SUPERB! Me and my oldest are getting ready to make some more right now before others get home! yUMMY!

Mmmm these are a nice change of pace for an oatmeal cookie. I used pecans instead of walnuts and they were good...But they were not as moist as I would have liked them to be. There was something missing as well and I can not put my finger on it. But overall they were good and I will be keeping the recipe.

I loved them! I substituted dried apricots for peaches since I couldn't find them at my store and they were simply fantastic! My friend and I ate a whole doubled batch in one night. I think I found a new favorite cookie!

Thank you Sunny for this wonderful cookie recipie, I have made this recipie 7 times in 2 months time and I keep getting request to make them from my family. It is very moist, chewy and delicious. It is so easy to make and would make a wonderful gift to bake at Christmas time, which I intend to do. This is by far my favorite cookie recipie ever. Thanks again.

1 I used fresh peaches instead of dried. Don't be afraid to use fresh fruit. If you're worried about mold, don't be. The cookies won't be around long enough.

2 I was able to get 36 cookies from 1 batch with a diameter of about 2 1/2 inches.

3 They're drop cookies. Don't bother with the nonsense of wetting your hands, rolling them, and pressing them. Just scoop out heaping teaspoonfuls and bake.
