I had a bag of Oatmeal Cookie Mix sitting in the pantry for months. Usually it's the choc chip cookie mix bag that goes first. I used the oatmeal cookie mix, added hydrated, chunks of peach, sliced almonds (didn't have macademia, and white choc chips. Delicious!!! I made these cookies in the middle of summer, served them warm with vanilla icream. They were gone! ... The spiciness reminded me of Christmas morning. We'll definitely make this again for the Winter Holidays ... for family & office gifts!

I picked this recipe because I really wanted to make a recipe that was out of the norm. I didn't want to go for the classic chocolate chip, peanut butter, etc. These cookies didn't disappoint. Everyone that tried one loved them. The dried peaches and walnuts add a subtle flavor while the white chocolate chips are accented by the combination. The only thing I would say bad about these is that the recipe only yields 20 cookies.

I made these cookies because my husband loves all things oatmeal. His response was "Okay, but I'd rather just have oatmeal cookies with raisins or dried cranberries." The consistency was perfect. They were chewy and stayed chewy the next day. However, I could not taste the peaches, and the flavor was somewhat odd--almost smoky. The cookies are not too sweet. If making this recipe, I would perhaps add a few more dried peaches and definitely more white chocolate chips.

Can't believe so many reviewers had trouble getting the peaches. Sun-Maid offers them and they are right there with the raisins and prunes. Love these but next time will try to re-hydrate the peaches in a little peach nectar first--mine were very hard--good thing I cut them small. Especially like that the recipe makes just enough to finish in the oven at one go. Hate to use the oven in Phoenix in the summer! We had 106 degrees today.

I also could not find dried peaches and used dried aprictos. This was very good. My family liked them and I even took them to my co workers and they liked them too. I will make these again. It was a easy recipe and I don't see how anyone could go wrong.

We followed the recipe exactly. The cookies came out great and were very tasty. We'll make this one again.
    Thanks, Sunny

Like the previous reviewer, dried peaches weren't available at my supermarket. So I decided to use 4 packages Peaches and Cream instant oatmeal. I adjusted sugars (eliminated white sugar and used only 1/2 cup light brown sugar and added 1 tspn. vanilla. My kids loved them and usually they hate oatmeal cookies.

I loved the texture of these cookies! Crispy yet chewy at the same time. I made a few changes: I diced up apricots because it's all I could find. I also tried to make it more figure friendly and used oat flour and natural sugar instead of the white processed flour and sugar. My husband loved them but said that they were too sweet for him. Not me! : I'm taking them to a friend's house tonight. :

I made these and brought them to a friends house, they were sooooo good! They were so dense and chewy, with a crunch of the walnuts at the same time. I couldn't find dried peaches, so I used dried apricots instead and it worked fantastic! I will be making these again or possibly never, because they are so good you can not stop eating them!

i don't cook very often...in fact, i rarely cook...but i am SO glad that i decided to make these. i was pretty weary when i first saw the recipe because dried peaches in cookies just sound really weird...the cookies are so moist though, and they kind of remind me of a snickerdoodle to a certain extent, only without the cinnamon. one batch only yields about 15-17 normal sized cookies so definitely plan on either making smaller amounts, or smaller cookies...either way, they're awesome...and im on my way to the store now for more walnuts and peaches to make more cookies for my family! =0
