This recipe is easy and mmmm good. I subsituted italian seasoned diced tomaotes for the sun dried tomatoes. Everyone wanted the recipe.

Great recipe! I thought it needed more dressing then what the recipe called for so I added Roasted Red Pepper Vinaigrette with Parmesan.The family loved it!

Making this again tonight! I use quinoa instead of pasta and add it while hot to soak up the dressing. So good!

This recipe is definately a keeper, even my 3 year-old loves it,well he loves all veggies anyways so this was great. I did double the dressing and added 1-cup crumbled feta cheese,absolutely one of the best pasta recipes ever!!!!!!!

I keep making this salad and I pass the recipe to my friends. Ihave found you can pretty much add any other ve g you want. I have also added capers. I rinse the artichoke hearts to reduce the acidity of the salad. Sooo Good!

had my first bowl today, a wonderful mixture of foods. the artichoke hearts looks like chicken pieces. i thought just a tiny less of the vinager and my wife thinks it needs a little more color. we will make this again with our own little tweaks.

I did increase the amount of vinegar and lemon just because I love vinegar anyway. I dont like olives so I left them out of my portion but the family said much better with olives. Oh and I just used one can of artichokes. It was really really good! Definitely a keeper!

This has quickly become my go-to salad. I made it first as written and I loved it! Last night, I used a little oil from the sun-dried tomatoes in with the olive oil, dropped in about 3 oz. of crumbled feta and some crushed red pepper flakes. Also delicious!! Besides being so flavorful, this salad is easy and you don't have to heat up your kitchen during these brutal summer months. It's also great to have on hand after a long work day. It's very adaptable...you could add chicken, bacon, Italian sausage...or sub mint for the parsley. Love it!!
