A great and easy way to make squash-- the almonds and cumin add something more unique. I saw a lot of comments regarding the squash skin. I found that if you leave it on, cut the squash in 1/2 inch cubes (or just a bit smaller, after one hour the skin is soft and delicious. Nice way to get some good vitamins!

i am not a big vegetable fan so i am always looking for a different way of making them. This recipe does the trick. The almonds or some type of nut is a must. The change in texture is certainly needed. I also agree with a previous post about leaving the skin on the acorn squash. Its very tough but you can remove it while you eat. No big deal.

I love this recipe! First off, I thought it was odd to leave the skins on the acorn squash. I was skeptical. And, cumin? Hmmmm. This recipe is WONDERFUL! I like to add a splash of rum to everything before putting it in the oven. DELIGHTFUL!!!

I love this recipe. I might use cayenne powder instead of the pepper flakes though, because I didn't like the texture of them in this dish. Really nice flavors for fall!

Try this in combination with crunchier vegetables - both the butternut squash and acorn squash have the same texture.

I made this last night for a 4th of July bbq. Although I found it a time consuming recipe, getting the peel off the squash, this dish had a lot of flavor. It was disappointing though that it was not a hit at all at the party. I came home w/ as much as I'd brought, and it was a party w/ over 100 guests. I'd make it again though.

This has become our family's favorite dinner to make. Pared with the ravioli from the show it is very easy to make and you really feel like you made something substantial. To the people complaining about the peel: She said you can peel it or not peel it, depending on your preference. Stop complaining.
