The flavor is so wonderful, the smell is enticing. Next time I think I'll try celonto instead of the basil. The aroma just seems to need that.

Sunny! This soup was so good! I've always wanted to try tomato soup... I thought it might taste like V-8 or something...but NO! OMG is was so delicious I've made anither batch. My family love it! It was hardy and sort of sweet not bitter. This soup is filling and your family will love it. It's great for cold days or anytime. Thanks Sunny! I love it! This is the best tasting tomato soup I've ever made! I made it tonight with the Monte Cristo, and the combination is fabulous! You might think that 8 cloves of garlic is too much, but when they're roasted, they turn very sweet. The recipe was very easy to make, and I have leftovers. Yeah!

I saw Sunny make this and it sounded so good. It was VERY easy to make. After the vegetables are roasted, the tomato and pepper peels slip right off. I used dried herbs and it was excellent. I liked the texture, a little thick but flavorful, not like the watery canned tomato soups. I never used an immersion blender and picked one up at Walmart for less than $20, wow, it blended the soup perfectly in less than 30 seconds. This was the first time I tried one of Sunny's recipes, I'll definitely be trying more.

As I was exercising and watching Food Network : I watched Sunny make this incredible soup. It was so good! The veggies smelled awesome while they were roasting in olive oil and balsamic vinegar. My only tweaks to the recipe were......using dried thyme, cutting the tomato paste in half (since I had read some reviews about the soup being too thick and I did add about 3/4 cup of heavy cream to make it creamy - but of course it would be equally delicious without that. I also made her Monte Cristo sandwiches from the same show and they were out of sight too!!

I am not a huge tomato soup fan but this had something about it that sounded good. I followed the instructions exactly and only added 1 additional step. I didnt like the little bits of skin from the tomatoes and peppers that were in it.

So I strained it using a Chinois/China Cap and that made it perfect. If you dont have either of those I would just use a regular small mesh or fine mesh strainer and it wil be great. Other than that I didnt change this recipe at all.

I did do a spin on the Monte Cristo sandwiches. I didnt have hallah or brioche bread, so I used a loaf of stale french bread and made the same recipe into a bread pudding. The two complimented each other VERY well, it was an adult kids meal.

I was recently diagnosed with diabetes and have been looking for interesting recipes for vegetables. This soup is delicious and is perfect for me. I love the roasted red peppers in the recipe and plan to find more ways to use those in my diet. Thanks Sunny. I love your show!

Made this recipe, but it was more like a tomato sauce than a soup. I would add more liquid next time - perhaps wine or more stock. It was tasty, just not what I expected.

This recipe is easy, inexpensive, and soooo good. This tomato soup meets every one of my expectations: not too salty, succulent and full of natural flavor, and most importantly not sweet. Every time I go to a restaurant or cafe and order their "homemade tomato soup" or buy soup from the store or market it always tastes so sweet and not at all like fresh tomatoes. This recipe captures the natural succulence of the simple ingredients; it comes out exactly the way you imagine it would.
