I am not a cook by any means but saw this and decided to try it. I made it and it's soooo good I will never buy store bought tomato soup again. Thank you for sharing this awesome recipe!!

I had never made homemade tomato soup before, but this looked so easy on TV that I had to try to make it. I am so glad I did! It was so tasty and wonderful. I roasted the veges the day before and put the pot in the frig overnight. All I had to do the next day was to put it in the food processor and reheat, which was so easy, and the flavors had a lot of time to really come together. I would highly recommend this recipe to anyone, even a novice like me!

Nice soup, very hearty. Made it last night and added my own spin: added a cooked carrot before blending to reduce acidity and added two tablespoons of light cream cheese after blending for richness. Served with shredded mozzarella and a small toast square in it. Delicious!

After seeing this made on TV I realized I had quite a few end of season tomatoes and peppers on the counter so I made this soup. I followed the recipe except I used dried tyme because I didn't have fresh in the house. The soup was fantastic! The last 5 minutes before serving I added a few chiffonade basil leaves to the soup. Garnished with a dollup of sour cream, chiffonade basil leaves. Served with a garlic/butter baguette.

This was so good! Only changes were 2 extra tomatoes, used veg. and chicken stock, and used dried herbs. Very, very good!

Saw this today - had most of the ingredients on hand. Did not have fresh thyme or basil, only had beef bouillon. My kids (5,8 were in charge of getting the veggies ready to roast. They loved that job. We roasted the veggies and left them in the oven a few hours until we were ready to finish the soup. We substituted the beef bouillon and finished as indicated with an immersion blender. I would probably blend in a blender next time to eliminate the tomato skins - kids didn't enjoy the occasional small piece of tomato skin. This soup was DELICIOUS!!! We will definitely make again - maybe even share a little.

I made this, but I added some other spices and other veggies. I also left mine a little chunky, and it was fantastic.
