I love this recipe--great for a snack or a meal. My son has decided that he likes the veggies on chips along with a little salsa. My husband and I like the whole thing-including the lime-cilantro sour cream along with some guacamole. I did cut the red pepper flakes in half like others suggested. So easy to make when you are in a hurry after work. Thanks Sunny!

Had to alter just a bit to accommodate what I had on hand but this makes a wonderful quesadilla. Already had some leftover chili beans w/jalapeno so just mashed them, used Frank's hot sauce instead of red pepper flakes, and regular jack cheese 'cause I didn't want it too hot. The sour cream sauce is a nice refreshing change from good old salsa.

This was so good, we made them again a few days later to use up the refried beans and we added left-over chicken. The sour cream is so light and cool paired with the quesadilla. I will make this over and over and over...

my husband is a really great cook, was raised cooking by his mom and also went to a cooking school to become a chef. Well I always try to cook him meals to make him say mmm...so he doesn't think that he is the only good cook in the house. I cooked him this meal and he absolutly loved it! He thought that it was one of the best Quesadillas he has had and I also love to cook/eat Quesadillas! Its great for when you come home and your in a rush to cook something for the family and its great at parties because you can cut it up into 8 pieces and it definatly goes around the room! Its just simple but it tastes amazing!

Saw it on the tv this afternoon, made it for supper (substituted regular for black refrieds and a shallot for red onion - hey, it's what's in the pantry. I made it in a saute pan instead of on a grill, and I had trouble flipping it, but it was just as good a little messy. Took maybe ten minutes from tv to table, and you can't beat that.

I love to make quesadillas so I'm always looking for variations. This was so simple and delish!
Now, I just wish Sunny would have had a better dessert! I'm so allergic to mangoes.

Loved the recipe! When I saw Sunny cook it on TV, I knew that it would be a success and it was. I did cut the red pepper flakes in half. 2 tsp was too much, so just use 1. I used dried cilantro and had to experiment with how much I needed to use so that it wouldn't be too over powering. I also added cooked, shredded chicken to it before I added the cheese. It was a meal in itself. My family of 3 can finish just 1 of the 2 quesadillas that it makes.
