    Loved the recipe! When I saw Sunny cook it on TV, I knew that it would be a success and it was. I did cut the red pepper flakes in half. 2 tsp was too much, so just use 1. I used dried cilantro and had to experiment with how much I needed to use so that it wouldn't be too over powering. I also added cooked, shredded chicken to it before I added the cheese. It was a meal in itself. My family of 3 can finish just 1 of the 2 quesadillas that it makes.

    This was so good and so easy. I took some leftovers to work and everyone loved it as much as we did. I will be making this again really soon.

    This the first of "Sunny's" receipes that I have tried...I was amazed! Not only are they super easy to fix, but they taste AMAZING! The sour cream dip, is just the right finisher!

    Filling is also great as an omelet or just mixed in with some scrambled eggs!

    I really liked this recipe. I had all of the ingredients at hand. I did add some sliced baby bellas to the cooked salsa and it added a meaty texture to the quesadillas. It is a great recipe for vegetarians ( we aren't but we do have veggie days and this was great! I didn't have any sour cream so we used bottled salsa for dipping. Love your recipes Sunny.

    I couldn't find refried black beans so I used spicy refried beans. Family thought they were a little too spicy. Next time ill use regular refried beans. Really easy meal to make.

    I thouhgt they were very good. They were easy to make and added a different taste to traditional quesadillas. My husband absolutely loved them. We will definetely make them again.

    There is nothing else to say but awesome! We had these for dinner. I would recommend putting less beans on each tortilla so you can taste the rest of the flavors. But I will be making this again!

    Sunny, you go girl!!! What a treat we had tonight! The southwest quesadilla was a hit! I only used what I had, refried pinto beans instead of black beans, monterey cheese instead of pepper jack cheese, added in fajita chicken pieces (husband has to have meat! and used regular sour cream bec I did not have a lime. This is definitely a keeper. A very quick and easy meal, not to mention just as satisfying. Viewers, please try this, you will not be disappointed!!!

    I loved this dish but next time I would cut the amount of red pepper flakes in half because it was a little too hot for my taste. If you like your food VERY hot (like when you see three chili icons next to a dish on a menu then leave it as is but if you just want a little kick, cut the red pepper amount in half. I also used fat free refried beans to cut some of the fat out and only used half the cheese it called for. I can see this as a main veggie dish or as appetizers depending on how you cut it up. Use fresh ingredients for maximum flavor.
