    these cookies are excellent.. not sure why there were so many bad ratings. I made the chai cookies and the flavor was amazing. I didn't have dark brown sugar so had to use light brown. Not sure if that change made for crumbly "dough" but it was not at all together.. That didn't matter b/c I just used a 1 Tb scoop and flipped the dough into my palm and made balls that way. What a nice tasting cookie with a shortbread texture. My cardamom is old so I can only imagine how good these will be when I replace that before my next baking day. PS these stayed in ball form so you can fit a lot on one cookie tray. I baked mine on ungreased stones for 14 min.

    If I recall correctly, I think the amount of flour differs on this website than from show. 1 Cup of flour should yield the flatter/buttery cookie. 2 Cups of flour yields cookies that keep the shape you drop them on the pan in and have a bit of a floury taste. Also, watch out on the instant coffee mix...some are stronger than others so you might want to use less. I also did the lemon/lime zest cookies and those were my favorite! Still a great basic/quick and easy cookie base you can play with and make multiple varieties of some tasty treats.

    i love them but i added my own twist. i put in ground nutmeg, ground clover, allspice, ground ginger, and cinnamon. And you need to add lots of all of them. I call them Jamaican Spice cookies.

    Delicious. I left out the ginger and added 1/2 tsp of vanilla to the creamed sugar and butter mixture. My dough was too soft, so I chilled it 1/2 hour before making the cookie balls. They came out great! Follow the advice to take them out before you think they're fully cooked. They will feel very soft, but will firm up as they cool.

    I thought I would give these a try even though the reviews were quite mixed. I used the spice variation laura_9443268 suggested (my slight changes: no salt, 3/4t cinnamon and 1/2t each of cloves, nutmeg and ginger as I too was looking for a cookie with a good amount of spice but no molasses. I refrigerated the dough for about 2 hours and then rolled into little logs instead of balls and then iced when cool. They are delicious! I am very pleased that these turned out exactly as I wanted. They are soft and spicy and great with a cup of coffee or hot chocolate. Give them a try using whatever blend of spices you like - you won't be sorry!!

    i made the coffee version of these and they came out fantastically! i used heaping tablespoons of instant coffee instead of espresso (when i ate one fresh out of the oven they had a slight toffee taste...so good! and made smaller balls than the recipe calls for. i drizzled melted semi-sweet chocolate on top to finish them off and they've been a big hit! it was such an easy recipe; definitely a keeper!

    These were not very good. They are absolutely dripping butter. I actually put on paper towels after cooling to sop some of the grease up! A shame to waste all that butter and Ginger on a blah recipe. I had such high hopes from the unusual spices but not much flavor.

    I THINK THAT CELESTE FROM NEW YORK NEEDS TO TRY IT AGAIN. WHY NOT FOLLOW THE RECIPE EXACTLY INSTEAD OF CHANGING IT ON THE FIRST READING. I HATE IT WHEN ALL OF YOU DO THAT. FOLLOW IT EXACTLY THEN GO BACK AND CHANGE WHAT YOU WANT. IT WILL MAKE YOU A BETTER BAKER. THE COOKIE MAY NOT BE PERFECT BUT IT IS MUCH BETTER THAN IT HAS BEEN RATED COMING FROM SOME OF YOU.

    I made these cookies for chritmas presents and boy did everyone love them!
    the chewy texture and spicy flavour is a brilliant combination that i will DEFINITLY try again!
    I din't have any cardamom, crystalised ginger or cracked black pepper so I used cinnamon, all spice and fresh ginger instead and it was DELICIOUS!
    they are definitly becoming a christmas tradition in our household.
