This is great soup and such an easy week night meal. Every fall this soup makes it to our table and continues to make an appearance through out the winter. Love it!!!

This was absolutely delicious. I did tinker with the recipie but only adding additional spices to the original. Like alot of other reviewers I added potatoes to mine and they were delish! I did not use the pickled jalapeno as I couldn't find it but added red pepper flakes for some heat. Will definitely make again.

This was wonderful!!! I added potatoes like a someone else and Texas ranchero(has to jalapenos in it already so did not add any more and omitted the tomatoes because that would be too acidic for me. I was skeptic of the spinach in it but it was great. We eat it for two days and loved it each day. College kid approved!

So easy and hearty and tasty! Goes amazing with sour cream and tortilla chips! I cook this all the time now. If serving for older people, might need to tone down the spices a bit.

Followed the recipe except I doubled the mushrooms and tomatoes, and used a whole bunch of kale instead of spinach. It went over amazingly well. Everyone at the table, 4 adults and 2 kids ages 10 and 13, didn't say much they just quietly started helping themselves to seconds and thirds until it was practically gone! The sour cream and tortilla chips are perfect with this soup.

We LOVED this soup!! The leftovers were better than the first servings! I followed the recipe just as it was written, and it turned out great! Love the mushrooms and spinach. It all came together just right, and loved the chips and sour cream topper! We will have this regularly during the upcoming fall and winter! Thanks, Sunny!

Once again Sunny has another winner. I made this last nite and everyone loved it. I just left out the jalepenos and added cayenne pepper. I even remembered to cut the strips across the grain so they would be nice and tender. I think that's what a lot of people forget.
