DELICIOUS!!! I've made this salad 2 years in a row for the 4th of July and each time friends and family are begging me for the recipe :- I eliminated the endive and it's great without it. I'm thinking of adding roasted red peppers the next time I make it and perhaps trying the blue cheese crumbles as another reader did. Awesome recipe Sunny, thank you!!!!

This recipe is absolutely delicious! Super simple to make and the entire family loved it! The only substitution was blue cheese instead of feta, and lemon juice since I forgot the lime. This is a winner and going to make it again this week!!

Never tasted grilled Belgian endive. Wonderful surprise! Grill the corn in its husk as well as place the wedges of endive on tinfoil for grilling. The salad is a meal all to itself. One that tastes high end but easy to make!

Delicious! I soaked the red onion in some vinegar before putting it into the salad because I dont really like the strong taste of raw onion, and that did the trick!

and I was very lazy, so just made it without grilling the corn and endive. Added some olive oil and salt (which would have been applied to the corn cobs for grilling and it was also delicious! So fresh and healthy tasting. I actually love the amount of heat that Sunny suggests for the cayenne. The only thing I changed was some more lime juice- a whole lime instead of 1/2. Enjoy!

...especially on the second day, after all the flavors have married. I reduced the cayenne by half, and instead added a pinch of smoked paprika to get the smokiness with less heat. It was awesome!
