    These cookies turned out VERY sweet. I have a few modifications that I made. Instead of making 'coins' and putting them together, I did individual bites with marshmallow topping on the top of the cookie (although you have to keep them cold otherwise the marshmallow runs everywhere.

    I had to knife on my chocolate. I wonder how the coins would taste if you baked them first? They kind of fell apart when I tried to dunk them in the chocolate.

    I would probably modify them this way next time: Make bite sized peanut butter cookieswith the graham cracker in the cookie batter, spread on melted chocolate on the middle, and then top with marshmallow fluff. Kind of like a sandwhich cookie instead.

    To take the tediousness out of making the coins, place a sheet of parchment paper of a flat surface - your kitchen counter or a baking sheet or large cutting board. Use a small cookie scoop to portion out the cookies onto the parchment, leaving enough spreading space between the cookies. Cover the cookies with another sheet of parchment. Using the bottom of a large baking sheet, gently place it on top of the top layer of parchment and press evenly on the baking sheet until cookies are the desired thickness. I use this same method to make uniform hamburger patties.

    they sound delicious....and I like the idea of using an 8x8 or 9x13 pan. Has anyone tried this? Are they too thin if you use a 9x13? Thanks!

    Dear Sunny:

    Out of all the cookies recipies listed here Sweetheart...(might just be me ...but I absolutely loved these!!! (...just a hint...any "no sugar" peanut butter will do...just add equal parts of Splenda...and then your good to go....

    These cookies are wonderful and my kids devoured them! A couple of cooking notes however. I needed to add additional melted butter due to my batter being too dry. I made mine with the Rice Crispies. Also it worked much better for me to knife on the chocolate rather then dipping. The taste and crunch of this cookie is sure to please! Better than the real smore!

    Another option is to take 1/2 the mixture and coat a pan (lightly greased with it. For the next layer, spread the marshmallow, etc. filling over it. Put the other 1/2 of the mixture on top - pat it out separately with waxed paper to match the size of your pan and then peel the paper off as you put it on top of your filling. Refrigerate and cut in to bars when ready to eat. Less messy that way. :-
