Awesome! I did change it up and used Poblano peppers as they gave a richer taste than the Cubanelles and increased the rice to 1/2 c. and water just over a cup. I found that the first time I made these and followed the recipe exactly, the rice was undercooked. Adding some Chihuahua cheese was awesome as well! You can really make these your own if you have any mexican cooking background and know your meats and spices! But awesome just the way they were as well!

These were really good! Couple of changes- used poblano peppers- couldn't find the cubanelle. I also added some Italian white cheese into the meat as well as on top before taking out of the oven. I gave this four stars because I thought the sauce needed a flavor boost. I would add some herbs, garlic, etc. Otherwise- this is my new stuffed pepper go to recipe.

I haven't made stuffed peppers in years - but when I saw these on TV i had to try them!

This was the best stuffed pepper recipe I've ever made. I stuck with the recipe as written and couldn't be happier. I lost my original copy so just went to foodnetwork.com and printed out two more. I want to make sure I don't ever lose this one! Thanks again!

This is the first recipe I have made of Sunny's dishes , I made it today for dinner . I could not find cubanelles in Northern New Hampshire and was really surprised when I saw the Poblanos . After reading the comments about cooking the rice , I decided to use brown rice . I precooked the rice for about 25 min's instead of the usual 45 . I doubled the recipe and used 1 lb beef and 1 lb pork , and made a meat loaf for the freezer . I served it with Fresh corn off the cob that I tossed with a little olive oil cummin and cilantro then roasted in a foil pouch in the oven with the peppers . It was a great success , we loved it.

Made a few substitutions but worked well. I didn't have 8 cubanelles ripe on the plant so I used 2 cubanelle, 2 Poblano, and 2 green bell peppers. I also used half pound of ground 80/20 and half pound of Mexican fresh chorizo.
Turned out really well and has a nice kick to it.

These peppers were awesome, I could not find Cubanelles in my area so i used Poblanos instead. I will make these peppers again. I would love to try them with the Cubanelles though.

The stores in my area do not carry this seasoning. I was wondering if anyone knows what the ingrediants are in the seasonng packets so I can add them to to the recipe? The reason I gave it 3 stars is I saw the show and it looked good to try. I will repost after I try it. Thanks for any help.

These were great! I'll make these a lot and never have left overs for long. One person told me these were the best thing I've ever cooked....not sure I'll go that far :- but they were very good.
