My husband loved these and so did I. I substituted taco sauce for the tomato sauce and added in quesadilla cheese with the mixture. It was soooooooooo yummy! I will definitely make these again. You did it again Sunny! Another great recipe!

This was really good! A nice change from the Italian Stuffed Peppers you usually have. I did not have cumin on hand so I substituted chili powder instead. Next time I make will make sure I use the cumin but either way these were great. There was not enough stuffing for 8 peppers however, but I did get 6 out of it. A definite keeper!

THIS WAS MY FIRST 'SUNNY' RECIPE AND WAS INTRIGUED BY THE CUBANELLES. A BIT OF A PAIN TO STUFF THEM (TRIED TO FIND MOSTLY STRAIGHT ONES BUT THE PEPPERS WERE THE PERFECT COMPLIMENT TO THE SOMEWHAT SPICY MEAT MIXTURE. KINDA AGREE WITH PREVIOUS REVIEWER ABOUT THE RICE...HOWEVER, MINE DID COOK - BUT I THINK A LITTLE PRE-BOILING WOULD GO A LONG WAY AND I INTEND TO COOK IT IN THE TOMATO SAUCE FOR A FEW MINUTES NEXT TIME. ONLY ADDITIONS WERE SOME CRUSHED OR ALEPPO PEPPER, DASH OF CHIPOTLE CHILE POWDER AND I USED HALF GOYA SPANISH STYLE TOMATO SAUCE (WHICH IS MUCH THICKER AND RICHER AND HALF HUNTS, NO- SALT SAUCE.

WITH LEFTOVER MEAT (I DOUBLED THE RECIPE I PUT IT IN A CASSEROLE AND LAYERED MONTERY JACK WITH JALEPENOS AND COTIJA CHEESE. YOU CAN EAT IT LIKE THAT WITH FRESH TOMATOES, CILANTRO, GREEN ONIONS ON TOP OR SERVE WITH SOME TOASTED CORN TORTILLAS.

A VERSATILE AND REALLY TASTY DISH.

Great diversion from the regular stuffed pepper! Used anaheim and pobalno peppers. Liked the spicy poblano a little better. Since I only bought 4 peppers to stuff for the 2 of us, had extra stuffing....made a free form meatloaf....very tastey! AND, served with the corn salad from the show (without the fennel which provided a nice crunch and cooling.

Since I was using very lean ground beef (96/4, I used cooked rice. I used several different peppers: green chiles, yellow anaheims, and pasilla. All good!

I made it the same night I watched the show. We loved the corn salad and the peppers. Did not make the dessert. This will be a favorite from now on. Thanks Sunny.

I saw this on TV yesterday and had to make them today. They turned out really good. The only thing i would do different is to cook the long grain rice 1st and not add it raw. There was still some hardness to the rice even with the added moisture from the tomatoe sauce. Otherwise, this dish was so tasty and flavorful. I will be making this again in the very near future. Thanks Sunny!!!

Sunny neither precooked the rice nor the hamburger meat. She also allowed that you could use poblano or even a bell pepper if you could not find the cubanelles. Enjoy...I love her recipes. Thank you, Sunny....Sydney

Do you need to cook the rice before you add it or just throw it in uncooked? Please and thanks. Wanting to make this tonight.

Made this last night after seeing the show. Couldn't find cubanelles, but did find the sazon. The filling was delicious! No you don't brown the meat first. I think this would be great in any kind of pepper. I will make this again and again!
