    After reading other reviews, I used some of the juice from the fruit and used a slightly bigger can. I also used buttermilk rather than cream as I don't usually have cream ...It turned out great. Will make this again.

    brandy taste too strong,20 min not long enough for fruit and nuts, cornmeal had grainy texture. BUT my husband liked it so will probably try again with some tweaking.

    I can't wait to try this recipe, it looked so go on tv . my mouth was wayering just watching it being plated-up . good job !!!!!!! looking forward to more recipes like this in future. ck from pa.

    very good recipe; add 3/4 tsp. vanilla extract. did not use the brandy. and the cornbread was nice and moist- don't overbake it though!

    THE SECOND TIME
    I USED SOME SHREDDED COCONUT AND FRESH PINEAPPLE AND IT TASTED PINEAPPLE COCONUT CAKE

    I made this cake at Easter. It was terrible. Now I'm beginning to wonder if these chefs taste these recipes before putting them on the air for us to try.

    This was awful. It was too dry for cake and the topping too sweet to be served with the meal. The flavors didn't mesh well. I'm a baker and I thought it was not enough sugar in the cornbread to make a tender crumb, but I followed the recipe anyway. What a mistake!

    I TRIED THIS CAKE AND IT WAS NOT GOOD. WHY DID I HAVE TO USE DARK BROWN AND LIGHT BROWN SUGAR? IT WAS DRY EXACTLY LIKE CORNBREAD AND NOTHING LIKE A CAKE. I WILL TRY IT AGAIN AND I WILL USE A LARGER PAN (10-12 INCH IRON PAN. I WILL NOT DRAIN THE FRUIT COCKTAIL COMPLETELY. I WILL USE ONLY LIGHT BROWN SUGAR AND ADD EXTRA. I WILL ALSO USE A LITTLE MORE CREAM. ALSO WHENEVER YOU ARE USING NUTS THEY SHOULD BE COOKED COMPLETELY. THIS FOR ME WAS REALLY BAD. THE TIME ALLOW DID NOT COOK THE NUTS.

    While my 9 year old read the recipe, my 6 year old poured in the ingredients and even mixed it. My family loved it. I made some extra and took it to a few friends as well. WOW. What great taste. I addded regular milk since I was out of cream and added an extra tsp of brown sugar. The 2nd and 3rd ones that I made I used peaches and pineapple. I got a call right after the other families ate it and they wanted the recipe right away.
