    Preparing this dish was a breeze. I made it to go along with white rice and lemon butter sole and it was so good. My husband who is not a vegetable fan went back for more . The flavor of the zucchini and squash really came through in this recipe.

    I added half of a chopped red pepper just to add color. This recipe was delicious!!! I will definitely make this again. It was simple and easy.

    I love this recipe because the taste of butter is amazing on the squash. It is also really easy to cook and everyone really seems to enjoy it! A keeper for sure! It is also good with some fresh grated parmesan cheese sprinkled on top.

    I don't normally use onions or chives in my cooking but I love zucchini and yellow squash, so I figured I would give this recipe a try. I used Smart Balance instead of butter, and this is a great recipe to mix in my rotation for zucchini. I will be making this for a party at work this week. I'm sure there will be no leftovers.

    Love this recipe ,added cherry tomato and mushrooms roasted it in the oven. Great side dish all week. And healthy!!!
