I forgot the salt and they were still good! I used pecans because I didn't have walnuts on hand and they came out well.

I love to keep some muffins in the freezer for mornings when I don't have much time, and these are great. They're best right out of the oven, of course, but still a good breakfast just nuked for about 30 seconds.

I don't understand Ursula's 3-star review, below. How can you make several changes to ingredients and measurements in a recipe and then complain that it wasn't that great? That was a review of her own recipe, not Sunny's.

this is the best muffin I've ever had with strawberries. I've made this a couple of times already with different ingredients - fruit & veggies. I've also made it with whole wheat flour and wheat germ. See the results here : http://themissingsoysauce.blogspot.com/search/label/Mommy%20Stuff

Judging from all of the 5 star reviews, i was expecting a primo tasting muffin. I would have to say that they were just "good" at best. I also tweaked the recipe a bit. I added one mashed banana along with one chopped banana to add alittle texture. The recipe called for 1 cup of strawberries but i added about a cup and a half because i didn't have any blueberries. A couple of the reviews suggested adding 3/4 cup of sugar rather than 1 cup so i opted for 3/4. The muffins were a bit bland in the sugar department so i will add 1 cup next time. As far as cooking time went, i baked the muffins about 25 minutes and they were quite moist especially because of the chopped banana. All in all the muffins weren't complete perfection but then again...what is?

Made them this morning. I usually have all the ingredients on hand (e/c for the walnuts so I figured I should give it a try. They came out so delicious! I don't normally like really sweet muffins, but one cup of sugar didn't make them too sweet. The mix yielded more than 12, maybe like 15.

I used all white whole wheat flour instead of the all-purpose flour and they came out great. I was surprised that the recipe didn't call for some whole wheat flour, given how healthy these could be. I cut the sugar in half. I don't like sweet muffins, esp. for breakfast. It was great to find a recipe that included strawberries! Why aren't there more?

This is the first recipe I tried of hers and it is so good and easy to make. My son really loves fruit and treats so this was a great thing to make for him for breakfast in the morning. They even stay well . They are just as moist and fresh the next day. So good and it is made with ingriedients that most have in the pantry so even better
