WOW! These are delicioussssss!!!! I did make some substitutions since I didn't have all the exact ingredients and it still turned out awesome!! For the fruit I substituted fresh strawberries for frozen since that is what I had, I added two mashed bananas since I just love bananas, and I didn't have the blueberries so I sub 1/2 of a golden delicious apple...Wow, what a great breakfast muffin. I also substitued pumpkin pie spice from making pie on Thanksgiving( which has nutmeg, cinnamon, ginger and allspice since I didn't have cinnamon and nutmeg seperate. These turned out delicious!! Will def do again!!

I rarely disagree with other reviewers, particularly so many who really like these muffins. I thought they were edible--they weren't awful--but definitely not five stars. The muffins weren't sweet enough (and I usually like less sweet than more and the batter came out too dry (I had to add milk which helped. Wouldn't make them again.

This is a fantastic and easy to make recipe for dairy free muffins. I did not have a lemon at home so used juice of half a lime instead and because of nut allergies omitted the walnuts.
I also used frozen strawberries (heated up in the microwave and frozen blueberries to no ill effect - the muffins came out fabulous! Everyone from my toddler to rather finicky eater husband wanted more, more and MORE!

I love to bake, but have never had good luck with muffins..Until Now! I too substituted 1/2 wheat flour and I didn't have any strawberries, so I used fresh peaches. Also added a bit of ginger. I will definitely save this recipe and make it again and again. Thanks Sunny. (By the way, it was rainy and cloudy until I took the muffins out of the oven. Now the sun is shining. lol

I made these yesterday and they were so good that I made another batch today. Really easy to follow these directions. I went through them so fast I had to stop and say hey did you miss something? No I didn't, just real easy to read and they are so filling. I made them in my silicone large muffin pan. They are just wonderful. A real keeper. Thanks Sunny!

My family, friends and co-workers can't get enough of these. My daughter refers to them as "crack" muffins because she can't stop eating them when I bake a batch. My question is, can these be frozen and if so how long can I keep them frozen. My kids have finally moved out and I would like to make extra batches to freeze for when they stop by to visit.
Thanks.
