I love this dish. I don't like black eyed peas (nor does my family, but this changed our mind for the one time out of the year we eat them. Prepared it the day ahead to let the juices soak overnight, and we added 1 T apple cider vinegar and 1 T sugar to add more tang and sweetness.

I haven't thought about us eating this delicious salad since last New Year's day. I was unemployed last year...this year I have a new and prosperous career...A coincidence? I think not!!

Generally, we love black eyed pea salads. Individually, we like all of ingredients, so we thought the combo would be really appealing. We made the recipe as written. Unfortunately, it was just average. It seemed like it needed a little more acid (e.g., lime juice or maybe a touch of vinegar to balance the cilantro and the ginger.

Very refreshing, light and beautiful. Cilantro was a bit strong for my taste--I'll cut back on it next time. Yummy!

I made this for New Year's .... there was none left over! I didn't think I liked black eyed peas but I loved this salad.

I saw this recipe on the holiday show - and immediately knew I was taking it to a friend's on New Year's Day. It was so very good and really, really pretty! I thought at first that I put in too much onion but it mellowed out after sitting for a bit, and along with the other ingredients (particularly the lime juice, cilantro, and ginger it was a nice light, refreshing, side dish. I'll definitely make it again and for all sorts of occasions.
