    Great vegetarian burrito (yes, burrito, not at all a soft taco! Quick, easy, and simple. As usual, I doubled the garlic. Surprisingly filling.

    This is my 18 mo. olds favorite meal. The presentation of these tacos is very appealing. I substitute brown rice, add a little more water and double the cooking time for a little healthier dish.

    I have made this dish several times, but have learned I have to make it the day before & then bake it the day we are going to eat it. With the cooking of the veggies & then the time needed for the rice, it was just too much for me to do in one evening when I got home from work at 5:30.

    Come on, people - don't you know the difference between a taco and a burrito? You even call it a burrito at the end of the recipe, which is what it is. Don't be so loose with your language - it is NOT a taco!
